Greetings friends! Here is my Cheap Vacation Meal Ideas video. Traveling for summer vacation or spring break? Here are some quick meals that I prepped beforehand, along with bringing ingredients to make fast, but delicious meals from our vacation rental!
In today's video I show you 4 different breakfasts that include breakfast burritos, creme brulee french toast, and waffles, several lunches including wraps and sandwiches, and 2 ridiculously easy dinners of a salsa verde chicken casserole and linguine with meatballs. These were the best vacation meal ideas!
In my previous video, "Vacation Meal Prep", I show you all the foods that I bring with us in a large ice chest to keep fresh, so that we won't have to go out and purchase food on vacation.
Making cheap meals in our airbnb's not only save us hundreds of dollars (there's 5 in our family, and we can EAT!), but it also prevents us from wasting our food that would just be sitting at home in our pantry and fridge.
Bringing our own food also allowed us more time to be able to relax and spend time in our vacation rentals. Also, it was so nice to not have to dress up for all the meals, or think and plan about where to eat , etc. We got up whenever we wanted (6am still for the kids, oh my goodness! haha!) and snack whenever we felt like. I loved the freedom of doing this that would be really hard to get if you stayed in a basic hotel room.
If you have never stayed at an airbnb or a vacation rental in general, the price is almost comparable to hotels, but you usually get a full kitchen with your stay, which can overall save you money in the end!
If a vacation home isn't your thing, perhaps spending a little more money and upgrading to a family suite at a hotel that includes a full kitchen is a great option too! I know that Homewood Suites and plenty of other hotel chains offer these types of accommodations so that you can make full use of their kitchen suites.

Salsa Verde Chicken Casserole:
2 Chicken Breasts, poached and shredded
1 Jar Salsa Verde
1 brick of softened Cream Cheese
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
6-7 corn tortillas cut into strips
1 cup shredded monterey jack cheese
1 cup shredded cheddar cheese
Combine all ingredients together, keeping 1/2 cup of cheese aside. Place chicken mixture into foil pan and top with 1/2 cup shredded cheese. Bake in 350 degree Fahrenheit oven for about 25 minutes or until warmed through.
