It's an amazing cheese cave,🥰🥰 I also vacuum the cheeses, but after a while it takes air and opens. Is the problem in the machine? Thank you.

Yes, sometimes my bags unseal. I think usually it's because they get damaged via transferring and flipping them --- the bag gets a little hole, or the seam weakens. Sometimes the cheese seems fine (no mold or anything) so I just let it go. Other times, I can see mold developing so I'll unpack the cheese and wipe it down and then reseal it in a fresh bag. Also, sometimes I'll double seal the bag if I feel like it needs a little extra security....

Why is the stirred curd only good for cooking? Did the flavor not turn out how you expected?

Yeah, probably --- I don't remember exactly, but when cheeses are fine but not great, I mark them "for cooking only."

Noticed the havarti have you tried aging it? I get an aged havarti at the store it's amazing!

No, not really! I've only made it a couple times, and it's been quite awhile...
