Ingredients:
Fresh whole milk (1 gallon)
Vinegar or lemon juice (1/4 cup)
Salt (to taste)
Equipment:
Large pot
Cheesecloth or a clean kitchen towel
Colander
Large spoon
Thermometer (optional)
Heavy object or weights for pressing
Steps to Make Homemade Cheese
Heat the Milk:
Pour the fresh milk into a large pot.
Slowly heat the milk over medium heat, stirring occasionally to prevent it from scorching at the bottom.
If using a thermometer, heat the milk to about 185°F (85°C). If you don’t have a thermometer, heat until it’s steaming but not boiling.
Add the Acid:
Once the milk is hot, add the vinegar or lemon juice. Stir gently to distribute the acid.
The milk should start to curdle within a minute or two. If it doesn't, add a little more vinegar or lemon juice.
Let the Milk Curdle:
Turn off the heat and let the milk sit for about 10-15 minutes. You should see curds (solid white clumps) separating from the whey (yellowish liquid).
Strain the Curds:
Line a colander with cheesecloth or a clean kitchen towel and place it over a large bowl or sink.
Carefully pour the curdled milk into the colander to strain out the whey. Be careful as it might be hot.
Rinse and Season:
Rinse the curds under cool water to remove any remaining whey and any acidic taste from the vinegar or lemon juice.
Gather the cheesecloth's edges and twist them to squeeze out excess moisture from the curds.
Sprinkle salt over the curds and mix gently. You can add other herbs or spices if desired.
Press the Cheese:
To make a firmer cheese, shape the curds into a round or block, wrap them tightly in the cheesecloth, and place them on a flat surface.
Put a heavy object (like a pot filled with water or a heavy book) on top to press the cheese. Leave it to press for about 1-2 hours, depending on how firm you want the cheese to be.
