I would like to say “thank you” for sharing your recipes. My sister in law married into a Hispanic family, she would NOT share the recipes she learned, the spices she used. I love cooking, and I appreciate so much your sharing!!!
Was she really doing the cooking or just bringing dishes the family had cooked? I knew someone like that once and we later found out she never cooked a single dish but had someone else cook for her. She had no clue what the recipe was because she could not cook boiling water!
Andy's is my favorite restaurant of ALL TIME (I used to eat it several times/week when I lived in Houston) and this is my favorite meal of all time. Thank you!!
I'm DEFINITELY going to make. And saving your recipe so I can always find it. I'm from Channelview Texas. Really Houston Texas, also. My Granddaughter and Grandson are Spanish, so I try to make Spanish food for them. When I can. They love my cooking, and they live with me with my Daughter.
I think this dish falls into the Tex-Mex category. It is certainly not Spanish. I doubt shredded velveeta is even sold in Spain....I may be wrong but I dont think so. 🤠

I don't know Andy's but our favorite local restaurant makes the best cheese enchiladas I have ever had and I have been looking for a copycat gravy recipe for years. I made your gravy recipe today and used Monterey Jack like they do and it is spot on! Thank you so much!
I made this tonight for dinner. I didn't use Velveeta, instead I used a Mexican cheese blend. Will definitely make again. Everyone enjoyed it and my son was spooning the sauce out of the pan lol Thank you again for sharing your recipes 😊 also, really appreciate the short to the point videos 👍

I have been following you for about a year and I like your VLOG very much. I used to live near Andy's and ate there at least once a week for years. YOU NAILED IT!!!!!! These are what I remember them being. The sauce is perfect. Now if you get their greens salsa recipe. Mucho caliente, but delicious. A big fan.

Light chili powder is made from California red chili pods and is milder and sweeter Dark chili powder is made from New Mexico red chili pods and is more robust and a little hotter.
Your recipes are right on...I have always made my grave with blend of dry chili, rehydrated in hot water, then blender time with garlic,onion,chicken bullion and spice...I'm going to try this and see how it is...It hard to teach this Abuela new ways...lol
Thank you for your recipes. They have helped me become confident in the kitchen. My husband cooks really well so I have always felt intimidated making food for him, but lately with your recipes everything has turned out SOOOO delicious.
I made these a month ago, then once more yesterday cause they were sooo good. I added a spoonful of Nacho Cheese to each one cause a friend claimed a restaurant did that and I didn't believe him until I saw another recipe where someone did. But I prefered this recipe, so I followed everything except for adding a little nacho cheese and it might sound odd but it tasted SO GOOD!!!

These look so good! Cheese enchiladas are my favorite! Gebhardt was my go to brand my entire adult life. We moved to Idaho three years ago and it's nowhere to be found up here, not even online. Well, not for a decent price.

I made the enchilada sauce just now. She is correct when she tells us to season to our preference. I used her measurements, tasted and decided I wanted more chili powder. The cheese enchiladas are in the oven now.
