Cheesy Beef & Potato Casserole 

4 lbs potatoes
1 lb ground beef
1 onion, diced
1 can cream of chicken
1 can evaporated milk (12 oz.)
1/2 C milk
2 tsp salt
1 tsp pepper
2 tsp onion powder
4 C cheddar cheese
1. Preheat oven to 350 degrees. Brown beef, onions, 1/2 tsp salt, 1/4 tsp pepper together until meat is fully cooked. Drain grease and set aside.
2. In a bowl whisk together cream of chicken, evaporated milk, milk, 1 tsp salt, 1/4 pepper, and onion powder and set aside.
3. In greased 9x13 baking dish, layer 1/3 of peeled potatoes, 1/3 ground beef mixture, followed by 1 cup cheese. Repeat 2 times (3 layers total)
4. Pour milk mixture over top evenly. Cover with foil and bake for 1 hour.
5. Check potatoes. Continue cooking if not tender yet.
6. Top with remaining cheese and bake for 5 minutes or until cheese is melted.
7. Take out and allow to sit for 15 minutes to thicken before serving.
