G'day Huey. Thank you mate for a great video. Firstly, where on Earth (or in Australia at least) do you even find Fosters Lager anymore. I haven't even seen that stuff for years. Secondly, I have heard a few chefs make the same statement, that the yeast in the beer improves the batter. Most commercial beers, including Fosters, have been pasteurised and do not have any live yeast in them. The only mainstream commercial beer I am aware of that has live yeast is the Coopers range of beers. They are bottle conditioned hence the layer of yeast sediment on the bottom of the bottle. If you give your recipe a try with Coopers I would be curious to know the difference. Thanks mate.
I know our local BWS store has it, but you can use any other lager for this recipe. I have actually tried Coopers, but prefer it with Fosters - maybe it works better with no yeast ... but, I don't know? Thanks for the info.
Huey's Fabulous Fast Food for One or Two. Fannys batter but I just use any beer I have on hand. BTW, My old mum use to be the chefs assistant at the Black Knight in Melbourne back in the 80’s, so if I get in strife in the kitchen, she’s a great help with tips. Despite Fosters being one of my main go to beers it's still hard to find in pubs. So does anyone know a pub club or rsl in Melbourne or Regional Victoria that this has Fosters because I have been going from pub to pub trying to find this
Hi Huey, great job as usual! Any suggestions for a gluten free version? We had a great beer batter then my daughter was diagnosed a coeliac. Since then we haven't had anything really work, either stick to the fish or taste good. Tried the usual xanthan gum etc but no joy..... On the flip side we have a great GF crumb now so not missing out there.
They all look yum. Maybe the first one wasn't as crisp being the first cab off the rank in brand new oil - dunno but I would eat every one of em haha...
