I'm from Detroit, and often toured that WONDERfully smelling bread plant often.. Don't know the plant tour theses days or if they still allow it. But back then you could sample till the tour bus pulled out..
I'm 72 now but still remember our baker Mr. Savarinni's bread ... he use to call it a cigar loaf that was made from his mama's recipe as he said ... it had a really nice aroma and texture and a sweetness to it also... have never had such bread since he passed ... the best recipes are truly made of great memories ...

You see, that's where you tripped up. You assumed Chef John wouldn't put cayenne when you should always be prepared for Chef to put cayenne in a dish, regardless of its savoriness.

Oh, thank God for these videos. They’re positively therapeutic. I watched this twice in a row to dispel the stress of my work day. And, on top of the video being uplifting, I now have a terrific bread recipe to try, soon. I used to bake bread all the time. It’s one of life’s great pleasures.

I've been baking my own bread for about twenty-five years and I recently made an accidental discovery. I baked a loaf of white bread in the evening and set it on a cooling rack on the kitchen counter at about 10:00 P.M. When I woke the next morning at about 7:00 A.M. I found that I'd forgotten the bread and left it out all night. The result was an improvement in the flavor and texture of the bread that was absolutely amazing. I don't know what the chemistry or physics of this transformation is all about, but I now do this every time that I bake a loaf of bread. Try it, you'll be pleasantly surprised.
So the secret is its *soft-whipped* batter! No *wonder* this white bread warms our *hart’s* like an early morning *sunbeam.* Chef John, you deserve a *blue ribbon* for this one.
I have been reviewing the Chef John recipe catalog, and I figured this would be the one recipe that would not have even a small shake of cayenne. Never change, indeed. 😄
Made this today and it was a WONDERful reminder of my childhood. I have never made bread until today and I’m 53 years old. Who knew I could make bread this good? Chef John knew.
This is almost exactly my white bread recipe. I don't know how Chef got ahold of it, he has never excepted my invitation and I have never met him so he must be sneaking around here somewhere but none the less I am honored 🤣. (I will absolutely tell all my friends, Chef John used my recipe) Anyway, what is the difference between warm butter band "melted butter"? A tip: if you wet the knife it will slip into the dough a little better and a chopping tecnique will keep it from catching.
Long Time Fan and subscriber here. I made this bread using AP unbleached flour and followed the recipe. Very easy to make and no manual kneading. What more could a guy ask for? I did however top with white poppy seed and sesame seed. The results were fantastic! Soft crust combined with a very velvety, delicate crumb that was almost cake-like. Just simply superb.
I've been making homemade bread since I was 14 (I'm a bit older now, ahem). Great job Chef John! Always enjoy your videos. I like to add some potato flakes to my white bread to give it that extra somn', somn'. Keep up the great work!
During this "lockdown" I have tried 4 bread recipes on youtube with no satisfaction. Thanks Chef John, I have now found your recipe so I can stop looking and trying more. We made this two weeks ago. We now make it every two weeks. It is fantastic. It lasts a long time too. We eat it with butter and apple butter on it. This is our go to bread recipe. We can't thank you enough for making this so easy. I don't think you realize how much you have helped us eat real food. Thank you, Chef John.
When times were tough in England Mum used to make our own bread then slice it cover it with a good layer of lard a sprinkle of salt and give it to us for lunch. One of my most happy memories from seventy years ago. Now an oldie living in OZ there are some things I miss greatly so I watch your videos of bangers & mash to Cornish pasties & roast chicken that was an expensive Sunday lunch in those days. I miss my Mum's steak & kidney pies with an up turned egg cup in the middle to stop the pie crust sinking onto the meat. Mum, Dad, & my kid sister are long gone now & I am alone far from UK. But I would not swap my life of adventure in the Asia Pacific for all the tea in China and I have been there so many times that now I am happily married to a Chinese lady for twenty years & now now she is the joy of my life. You can't possibly cook up a mixture, a recipe like that but for me it works! and the result is just perfect.
My mom made 14 loaves of bread every week for my family when we were growing up and there's no better smell than to walk in the kitchen and smell it coming outta the oven! Personally, I love it hot, fresh out of the oven with butter...yum! Learned a trick on how to cut it while it's warm without collapsing the bread---just run your bread knife under warm water for a sec, then lightly shake the excess and you're good to cut into it. Looking forward to trying this one!

Chef John, the timing couldn’t have been more perfect for this recipe. My 8 year old daughter tasted white bread for the first time couple days ago. Haha she loved it SO MUCH that she actually requested it be used in her sandwich for lunch at school. She never finishes her lunch ever and miraculously she’s been finishing it since the white bread. I obviously won’t give her white bread everyday but Jane I do make sandwiches, it is going to home made using your recipe. THANK YOU.
Please let us know how that turns out. With the baking soda and vinegar, you might get too much acid which could affect the rise in the oven. If you could, compare the pH of the vinegar with the pH of the buttermilk, and then reduce or eliminate the vinegar. I think adding more baking soda to compensate would give it an off taste.
With all my homemade bread I remove from the pan onto a rack & brush the entire loaf with melted butter & cover it with a flour sack towel & let it cool completely. This allows the entire loaf to be soft all around & removes the temptation of anyone to cut the loaf before it's completely cooled. The towel does amazing things to breads! I studied commercial baking in high school and our shop toured they factory/bakery where they made this bread. I was fascinated by how they literally poured the dough into the pans. Totally different from any other bread I had ever made.
I don't like making bread because it brings back memories of my deceased brother, but after watching your channel i think im going to make some home made bread for mother's day.

I make bread with AP flour all the time. Do you only use bread flour? Both are good, but really I don't notice much difference. Bread flour makes bread a little more chewy, but they are interchangeable for most basic bread recipes. I've substituted one for another and even mixed the two together with no major change in the bread.
A number of years ago I was having to bake 2-4 loaves of homemade bread a week!! My grandson’s, who are now 12 & 14, would not let me cool the bread, they absolutely HAD to have a slice of warm bread, right out of the oven!! Those boy’s were in heaven 😂😂 we will be making some soon, I hope!! They get to learn how!!
It's so nice that you did this recipe. I almost always make whole wheat bread, but every decade or so, I make white. I am very happy to have your white bread recipe and am going to try it. I'm sure it's WONDERful.

Very near what I make. It is such a great thing to take as a gift to new neighbors or sick friends along with homemade jam. It is always a huge hit and everyone in my family loves it! You have to show us how you make pimento cheese. Because white bread and pimento cheese make the most incredible sandwich. I know you would knock it out of the park. I am trying your recipe for this during the weekend!

Looks like it would be fun to make. Every chef john recipe I've made has been really tasty. I made his tartiflette for lunch today. Didn't have the proper cheese so made with mushroom studded brie. That is one beautiful loaf of white bread. White bread is fantastic. I like the “fancy” breads as well, but something about a white bread and fried bologna sandwich that just can’t be beat. Or a tomato and white bread sandwich. There’s a major bakery in my town, so believe it or not I have never in my 50+ years (we aren’t gonna talk about how many +’s) had a slice of that bread he didn’t mention the brand name of. Wonder why? Thanks Cjef John, for that fantastic lesson in bread making!
Thanks for posting this video/recipe. I doubt I will be buying much white bread form the store from now on. I've made two loaves of this so far and my family LOVES it. It makes for some fantastic French Toast as well. I ended up using 2% milk instead of whole, and 1/2 of the salt due to using salted butter. The result was/is amazing.
This was the last thing I made for my mother before she passed away. I haven’t seen a similar recipe since and haven’t made it since. I think most millennials aren’t familiar with it. She had a very old cookbook.
I'm happy with how this turned out. I was worried when it didn't rise at all during the 30 minutes in the pan before baking (maybe because I waited a full 2 hours first?) but it rose nicely in the oven. It's great toasted and used for sloppy Joes!
Not sure what you mean about the younger people "not knowing about white bread", its gone literally nowhere, not everyone eats only grain bread. and i'm 26 lol. but this homemade loaf looks divine, i'll probably make it myself one day, Thanks for the good work like always chef john!
One thing I learned baking our family bread, is to set the oven at 425 for preheating, let the loaf be in there for 10 min then turn it down to 350. It really helps it expand and rise.
