I did this recipe with a lamb shoulder and it was DELICIOUS... my sons, who are being raised in the UK, got to taste the true taste of lamb roast. My wife was thunderstruck to my cooking skill ;) I am from Bangladesh, the old part of Dhaka. I grew up eating such Nababi styled kebab roast... Thanks, chef Ranveer!

I’m from Lucknow & Raan ke jo aap nay durgat banaye hai…Bhai hum nay to kabhi nahi dekhi Lucknow may 🤷🏻♀️ isn’t Raan suppose to be one big chunk of meat that is cut into pieces with a knife after it’s done & as it’s being served to the guests??? Shredding it with hands like that would get a lot of cooks fired in Lucknow homes 😄😄
Is it ok that the otg gets heated up on the first use...my whole kitchen is hot...is it a. Issue with my otg, should I go for a change, it's still in return period.. please advise
Tried it and it turned out amazing. Although I had to cook the meat in a 'jugaad' tandoor (cook in salt in a big container) due to electricity issues :p But so glad the taste retained and it was wonderful ❤️
Wow. I know about a dozen words in Hindi so I don't understand most of what you're saying but- this is the proof that food is the universal language!. I'm going to make this. But, do you think mutton might be even better? I wouldn't want the flavour of the meat itself to get lost amongst those wonderful marinades.

Microwave is not for roasting, specially if you do not have a convection function. Even if you have you can try only small kebab's dont try this on microwave it would be disgusting trust me my father once attempted roasted chicken in microwave, we stopped eating chicken for a month 😊.
@@suchismitachakraborty5653 your father doesn't know how to cook. To answer original question, microwave convection and grill can be used. I use microwave for tender meat like chicken not mutton. Slow cook for 2 hr convection and 15 min grill for crust.

I don't see what's wrong with it. He is using a braise and sear/reverse sear method, which is how Bukhara at Delhi does it and which is how tough cuts of meat are made, and serves it similarly too. Ashish Kumars' method of searing and braising is nice too, but the gravy (despite looking gorgeous) seems a little out of place. Don't ever know of a raan being served like a stew.
@@SYLFan2008 First of all it's a cardinal sin to ruin such a wonderful cut of meat by shredding it and rearranging in a faux raan. Second, big cuts of meat need to be rested after cooking, shredding them early result in loss of juices and dry, rubbery texture which is very unappetizing. So both aesthetically and technically this recipe is wrong.
honestly, it is a very sad way to cook Raan. ITC Bukhara does it it like this too. Ideally the Raan should be intact and the whole leg should be slow cooked for about 4 -- 6 hours so that the fibres of the meat disintegrate and it can be pulled with a finger, while still retaining the the shape and presentation of the leg. stripping the raan and pating is back is cheating and is just like cooking any ordinary piece of mutton. Talk to me Ranveer, will lovingly share more insights about raan with you if you are willing to talk.
I thought you are trained in Lucknow under some great Khansamaas of erstwhile Awadh! But sorry to note that you insulted those Khansamaas by making a mockery of Awadhi Cuisine. When you cook next time, do not give reference of your Lucknow trained background! 😠
