Chef Steve Samson of Sotto-one of LA’s best Italian restaurants-was raised by a mother from Bologna, but cooks food from the southern end of Italy. And in southern Italy, fish is a big part of the cuisine, so he showed Playboy senior editor Jeremy Repanich how he makes an albacore tuna crudo with squash, pearl onions and a charred eggplant puree.
