They are all great videos to be honest, so far from unit 1 to unit 7, I am really looking forward for the rest of the units and much, much more, thank you.

I think it's because this course was for 1 credit. He had to keep it concise enough to test students on like it was reading from a textbook. Especially since I believe this was the only source material for the course. I could be wrong though. Ironically, they mix up the enzymatic rest names on this video.

@@roboedar Seriously. I think he should win an award for the highest number of mispronounced words in an educational series. Between this and the one on Maillard reactions I got: Saying "Maillard" different every time. Says po-LIM-erization instead of po-LY-merization, yet pronounces polymer correctly. For some reason he is desperate to confuse amylase with amylose, and sometimes invents new mystery substances such as "Amulose" and "Aminose" This was the first time I've heard the word "Astringic." It's funny, because google has not heard of this word either. I also caught an "amulopictin", too. I wonder if it's related to amylopectin? I also like how there's only two types of mash. You know that newer one, infusion mashing? It's way better than that old decoction mashing that they used whenever there were not accurate thermometers. XD It's ok though. His snazzy suit more than makes up for it.

This guy knows chemistry, not brewing. Many little mistakes throughout this video series. 4:08 made this mistake in another video as well - alpha-mylASE, not amylose

its worse than that - he's pronouncing words wrong over and over. amylAse not amyolose as he says. These are important distinctions - the -ase indicates it is an enzyme, -ose is a carbohydrate. I really don't understand how any chemistry professor would not be aware of that.
