Chettinad Chicken Daal Recipe

Ingredients
For the Chicken Daal:
Chicken (cut into 16 pieces) - 1 kg
Salt - 1 ½ tsp
Turmeric - ½ tsp
Pigeon pea (boiled) - ¾ cup
Tamarind pulp - ¼ cup
Oil - ½ cup
Onion (chopped) - 1 cup
Ginger-garlic paste - 1 tbsp
Coriander leaves (chopped) - 2 tbsp
For the Tadka (Tempering):
Star anise - 1
Cloves - 4
Cinnamon stick - 2-inch piece
Whole red chilies - 6
Curry leaves - 15
Masala to be Ground:
Kashmiri red chilies - 4
Coriander seeds - 1 tbsp
Black pepper - 10
Green chilies - 4
Gram lentils - 1 tbsp
Method for Masala:
Heat 2 tbsp of oil in a pan.
Add all the masala ingredients and fry until aromatic.
Grind the fried masala into a fine powder.
Method for Chicken Daal:
Heat oil in a pot and add the tadka ingredients. Sauté for a minute until fragrant.
Add the chopped onions and fry until they turn light golden brown.
Add the chicken pieces, ginger-garlic paste, and the freshly ground masala. Fry for about 5 minutes.
Cover the pot and cook until the chicken is halfway done.
Add tamarind pulp and boiled pigeon pea (arhar daal) along with some water to achieve a light consistency.
Cook until the chicken is fully tender and the flavors are well combined.
Garnish with chopped coriander leaves.
Serve hot with steamed rice.

Ingredients
For the Noodles:
Noodles (boiled) - 1 packet
For the Curry:
Coconut cream (sachet) - 1 packet
Water - 2 cups
Yogurt - 1 cup
Chickpea flour - 4 tbsp
Curry leaves - 6-7
Red chili powder - 1 tbsp
Red chili flakes - 1 tsp
Salt - 1 ½ tsp
Chicken powder - 1 tsp
Garlic powder - 1 tsp
For the Meat Sauce:
Boneless chicken chunks - 500 gm
Onion (minced) - 1 large
Garlic (crushed) - 1 tsp
Red chili powder - 2 tsp
Red chili flakes - 1 tsp
Black pepper - 1 tsp
Cumin (roasted and ground) - 1 tsp
Yogurt - 3 tbsp
Allspice - ¼ tsp
For Garnishing:
Fried onions - as required
Crispy fried garlic flakes - as required
Green chilies - as required
Coriander leaves - as required
Lemon slices - as required
Chili chips - as required
Fried wonton wrappers - as required
Chaat masala - as required
Method
For the Curry:
Mix all the ingredients for the curry in a pan.
Cook on medium heat, stirring continuously until the mixture thickens.
For the Meat Sauce:
Heat oil in a pan.
Add the chicken chunks and all the other ingredients for the meat sauce.
Cook until the chicken is tender and the oil separates on top.
To Assemble:
Place the boiled noodles in a bowl.
Pour the prepared curry over the noodles.
Add a generous amount of the meat sauce.
Garnish with fried onions, crispy garlic flakes, green chilies, coriander leaves, lemon slices, chili chips, fried wonton wrappers, and a sprinkle of chaat masala.
Serve hot and enjoy!
