Chicago's Catholics (most likely Italians) who couldn't be bothered with fish whipped up this belly filler when The Church forbade eating meat on Fridays. While some area eateries which offer it hold to the old tradition and serve it only on Fridays - such as Buona Beef - others have it on their daily menu for you to try any time. So if you're fasting, a vegetarian, or just don't feel like eating beast flesh, the pepper & egg sandwich is a hearty, meatless alternative.
