In this video, I am making the comfort food classic Chicken and Dumplings completely from scratch. I am making the northern style here, which are the fat, fluffy ones that float on top. I will save the southern style "slicks" for another video. These are the ones I had growing up, so this style is my personal favorite. I also included a secret ingredient, which spoiler alert it is chicken fat or schmaltz. Using chicken fat in place of butter adds a more chicken-y flavor and I think it is a step up, although butter is still very good. I hope you enjoy the video, and find it useful. Ingredients in the Soup:
1 Baseball Sized Onion, 6-8 oz.
2-3 Carrots, 3-4 oz.
2-3 Celery Stalks, 3-4 oz.
4 oz. Chicken Fat or Butter
4 oz. All Purpose Flour
8 Cups Chicken Stock
Salt to Taste
Parsley for Garnishing
Ingredients in the Dumplings:
10 oz. or 2 Cups All purpose Flour
1 Tsp. Baking Powder
1/4 Tsp Baking Soda
1 Tsp. Kosher Salt
2 Tbsp. or 1 oz. Chicken Fat or Butter
1 Egg, whisked
6 oz. or 3/4 cup Buttermilk
