I love having your daughter in charge of her own pot of "soup" in the kitchen. She seems about my daughter's age so I'll have to remember to incorporate my daughter like this too. She'd love it!

As an elementary school teacher I can say that you are doing a great job at teaching her to be engaged verbally as she is engaging with a tactile activity at an early age. She is so smart! Keep up the great work!

Maybe you can give her those relatively dull dinner knives that come with most eating sets as they are dull enough that they won't cut her, but still strong enough she might be able to cut/saw her way through a carrot?
In Poland we don't put pierogi in soup, especially with potatoes and cheese (white cheese, not cheddar I don't think is working well with pierogi), we have special ones which we called Uszka, there are very small and we stuff them with meat or cabbage and mushrooms, I recommend them with Borsch :D the acidity of the borscht perfectly complements its delicate Uszka :D

Oh, forgot to mention this recipe looks awesome! I love the idea of making chicken and dumplings, but hate the idea of making dumplings from scratch so the pierogies are perfect for that!
