. Salt to taste
. Ginger Garlic Green Chilli Paste (1 TBSP)
. Chaat Masala (1 TSP)
. MELTED BUTTER (while roasting)
2. Crispy Fried Chicken Drumsticks:
. Chicken Drumsticks (500 Grams)
. For Marination:
- Red Chilli Sauce/Hot Sauce (1 TBSP)
- Soy Sauce (1 TBSP)
- Salt (to taste)
- Ginger Garlic Paste (1 TBSP)
- Lime Juice (1 TBSP)
- Egg (1)
. Flour Coating/Seasoning:
- Refined Flour (2 cups)
- Red chilli powder (2 TSP)
- Salt (to taste)
- Garlic Powder (2 TSP)
- Onion Powder (2 TSP)
- White Pepper Powder (2 TSP)
. Ice Water bath
. Peri Peri Masala (optional)
. Mayonnaise
3. Crispy Chicken 65:
*Marinade*
. Boneless Chicken (500 gms)
. Curd (1/4 cup)
. Green Chilli Paste (1 TSP)
. Kashmiri Red Chilli Powder (2 TBSP)
. Cumin Powder (1 TSP)
. Salt to Taste
. Garam Masala (1/2 TSP)
. Back Pepper Powder (1/2 TSP)
. Corn Flour (1/4 cup)
. Ginger Garlic Paste (1.5 TBSP)
. Rice Flour (1/8 cup)
. Fresh Curry Leaves
. Fresh Coriander Leaves (chopped)
. Egg (1)
. Refined Hot Oil (1 TBSP)
. Oil for deep frying
*For Tossing*
. Oil (2 TBSP)
. Garlic [8 - 10 pods] (chopped)
. Green Ghillies [5 - 6] (sliced)
. Curry leaves
4. Spicy Chicken Leg Piece:
. Chicken Drumsticks (400-500 gms)
1st Marinade :
. Lemon juice (1 TBSP)
. Soaked Red Chilli Paste (1 - 1.5 TBSP)
. Ginger Garlic Paste (1 TBSP)
. Salt (to taste)
. Red Chilli Powder (1 TSP)
. Turmeric Powder (1/4 TSP)
. Coriander Powder (1 TSP)
. Chicken Masala (1 TSP)
Rest it for at least 1 hour
2nd Marinade :
. Cornflour (1/2 Cup)
. Rice Flour (1 TBSP) (optional)
. Fresh Coriander Leaves (chopped)
. Sesame Seeds (1 TSP)
