Chicken bread recipe | Bun with easy chicken filling

For the dough:
All purpose flour - 2 cups + 2-3 tablespoon
Sugar-2 teaspoon
Salt-1/2 teaspoon
Egg-1
Warm Milk-3/4 cup ( 180 ml)
Instant yeast - 1&1/2 teaspoon
Unsalted butter -30 g ( softened)
Chicken filling :
Oil-2 tablespoon
Finley chopped or grated garlic- 1 tablespoon
Boneless chicken - 350g ( cut into small cubes)
Salt-1/2 teaspoon
Paprika-1 teaspoon (more or less as per your taste). Can be replaced with chilli powder
Turmeric powder-1/4 teaspoon
Pepper powder-1/2 teaspoon
Garam masala-1/4 teaspoon
Ketchup - 1 teaspoon
Chilli sauce -1/2 teaspoon
Mozzarella cheese-1/2 cup
Egg wash -1 egg + 2 tablespoon milk (milk is optional)
Melted butter for brushing the buns.
Method:
Dough:
Mix warm milk, sugar, Instant yeast, egg. Add flour gradually , the dough has to be sticky. Do not make a hard dough, sticky dough makes soft breads.
Stir until the flour comes together.
Knead until a dough is formed.
Add the butter and knead untill the butter is absorbed by the dough.
Transfer the dough into a work place and knead for 6-8 minutes or untill a soft dough is formed.
Grease a bowl with oil or butter and keep the dough in the bowl. Cover and let it rest for 1-2 hours.
Chicken filling:
Heat a pan and add the oil.
Add the garlic and saute for a minute.
Add the chicken and fry over high heat for 3-4 minutes.
Add Salt, paprika, turmeric, pepper powder, garam masala ( In the video I added it last).
Cover and cook over low heat for 15 minutes or the chicken is done.
Once the chicken is cooked add ketchup and chilli sauce.
Cook for another 2-3 minutes. Switch off the heat and let it cool.
Assembling:
Take out the dough and punch to release the air.
Divide the dough in to 7-8 equal portions.
Shape the dough into smooth balls and keep it covered for 15-20 minutes.
Roll out the balls into thin circles. Make cuts on one edge as shown in the video.
Place mozzarella cheese and chicken filling and fold from the edges. ( Please check the video)
Place the breads on a tray lined with parchment paper.
Cover and let it rest for 20-30 minutes.
After 30 minutes brush with egg and sprinkle some sesame seeds.
Baking:
Preheat the oven at 180C for 10 minutes.
Bake the chicken breads at 180C for 30-35 minutes.
Once done take out the breads and brush with melted butter , do it when the breads are still hot.
Serve hot.
