I had to look it up and I’m glad I did. Kasuri methi is (are?) the wonderfully aromatic dried leaves of the fenugreek plant. My local market labels them Sabzi Gormeh, which is the name of a famous stew aromatized with kasuri methi!
PS Kashmiri chilli is supposed to be a relatively mild type (but might not always be labeled right because the last I had was fiery hot!). New Mexico or California chiles would probably be the closest widely obtainable substitute for Indian food lovers in North America.

Hi, your recipes are very nice. Can you also start a series of tiffin recipes for kids which are healthy and we can make it fast in the morning as most of the mothers are working these days. The kids hate parathas and rotis so something different if you can start please. Thank you!! :)
