Chicken Casserole
6-8 diced celery stalks
1 small diced onion
2 boxes Chicken Stove Top Stuffing
2 cans of Campbells Cream of Chicken
2 lbs Chicken Breast/Tenderloin
3 cups shredded cheddar or Mexican mix
Boil chicken and cut into small cubes.
Prepare the Stuffing and Soup as you normally would.
Cook the Campbells soup - ensure it has thickened.
While that is going pan fry the celery and onions.
Layer all the cooked ingredients in this order:
1. Stuffing
2. Celery and Onion
3. Chicken
4. Chicken soup
5. Cheese
Now bake at 350 degrees until the cheese on top is melted and has a bit of browning at the edges.
