@@melodi22 yea what so ever vegetables you add in it becomes raft This happens due to protein in meat and egg that is added and hence raft is formed

For your mirepoix, dont brunoise the veggies, julienne them instead, and you will be able to pour from the pan and the raft will not break. Also i found that a china cap with coffee strainers filters the consomme much better
