Chicken Gobi (also known as Chicken with Cauliflower) is a delicious Indian dish that combines tender chicken pieces with flavorful cauliflower in a blend of spices. Here's a simple recipe to make Chicken Gobi at home:
Ingredients:
500 grams chicken, cut into bite-sized pieces
1 medium cauliflower, cut into florets
2 onions, finely chopped
2 tomatoes, pureed or finely chopped
1 tablespoon ginger-garlic paste
1 green chili, chopped (optional, adjust to taste)
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon coriander powder
1/2 teaspoon garam masala powder
Salt to taste
Fresh coriander leaves for garnish
2 tablespoons cooking oil
Instructions:
Marinate the Chicken:
In a bowl, mix the chicken pieces with half a teaspoon of turmeric powder, half a teaspoon of red chili powder, and salt. Set aside for at least 15-20 minutes.
Prepare the Cauliflower:
Wash the cauliflower thoroughly and cut it into medium-sized florets. You can blanch them in hot water for 3-4 minutes if you prefer a softer texture, but it's optional.
Cooking:
Heat oil in a large pan or kadhai over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn golden brown.
Add ginger-garlic paste and chopped green chili. Sauté for another 2 minutes until the raw smell goes away.
Add Spices:
Add remaining turmeric powder, red chili powder, and coriander powder. Mix well and cook for a minute.
Add Tomatoes:
Add tomato puree or finely chopped tomatoes to the pan. Cook until the tomatoes are soft and the oil starts to separate from the masala.
Cook Chicken:
Add the marinated chicken pieces to the pan. Cook on medium-high heat until the chicken changes color and starts to brown slightly.
Add Cauliflower:
Add cauliflower florets to the pan. Mix well with the chicken and spices.
Simmer:
Reduce the heat to low-medium, cover the pan, and let it simmer for about 15-20 minutes or until the chicken and cauliflower are cooked through. Stir occasionally to prevent sticking and ensure even cooking.
Finish with Garam Masala:
Once the chicken and cauliflower are cooked, sprinkle garam masala powder over the dish. Mix well and cook for another minute.
Garnish and Serve:
Garnish with freshly chopped coriander leaves.
Serve Hot:
Chicken Gobi is best served hot with steamed rice, roti, or naan.
