I realized I mixed up my egg wash and flour process in the line up, but I went back and switched it and fried the rest of my chicken. But overall the Homemade Chicken Katsu turned out very good! This was just our usual Sunday potluck dinner.
This is what I used to cook for 12-15 people, I could've fried 5-6 more pieces after. Not going to lie, I just eyeballed it but don't come for me! Lol I'm just used to cooking for large crowds.
-- Chicken Katsu for Large Parties --
15 Skinless Chicken Thighs
6 eggs - this is for your breading.
Cup of all-purpose flour - this is for your breading.
1 box of Panko (You probably can do half of the box) -- This is also for breading.
2 tsp salt
2 tsp pepper
2 tsp garlic powder
2 tsp of Cajun - give it a little pop in your mouth lol
1 1/2 Bottles of 48fl oz of vegetable oil.
Temperature should be between 350-375 F (High-Medium Heat)
I place 5 pieces of chicken in my pot and fried it for 6 minutes and it turned out AMAZING!
In order for your katsu to be cooked evenly, taste juicy, skin looking golden brown, and the outside crispy then deep frying is the way to go. If you want to fry it in a skillet and use less vegetable oil, you can do that too and nobody will be mad at you! Enjoy!
