There were these lettuce wraps with this amazing tamarind Cashew sauce I made back at a restaurant I worked at 16 years ago now (crazy, makes me feel so old) and it was my favorite thing to eat there. I haven't had it since, and I'm sure other restaurants make other good versions, but this one has had a choke hold on ne since. I thought, let's go for trying to duplicate that sauce! I know certain parts of it, so I dug deep and went off intuition of what I remembered making all those years ago. Tamarind is super crucial to this dip, and you can buy it on Amazon or in some grocery stores in the Asian/Indian section. It's worth it a little goes a long way, and the flavors are hard to duplicate.
Tamarind is a tropical fruit derived from the tamarind tree (Tamarindus indica), which is native to Africa but also widely grown in India, Southeast Asia, and the Caribbean The tree produces pod-like fruits that contain a tangy, sweet-sour pulp.
At the restaurant, I remember the very sticky pods that I had to grind into a pulp, but now fays you can just buy the paste already made up for you!
I eyeballed the ingredients, and you can put whatever you love to put on your lettuce wraps, I put some sauce on top and left extra on the side to dip. I also last minute decided to add some avocado on top! The weather got bad here fast, and it got super dark out, so I was trying to assemble by the window sill lol so sorry for the choppy video. I was rushing against time on that one!
Chicken Marinade:
1/4 cup hoisin
1/4 cup tamari or soy sauce
1 tablespoon fresh ginger
1 tablespoon siracha
1 tablespoon rice wine vinegar
1 tablespoon garlic
1 teaspoon chicken bullion granules
2 chicken breasts
Marinate for 30 minutes, cook however you prefer, I grilled it.
Tamarind Cashew Sauce:
1 tablespoon balsamic vinegar
1 teaspoon plum vinegar
1 teaspoon tamarind paste
1/2 cup honey
1 tablespoon brown sugar
1 teaspoon cumin
1/2 cup cashews
3/4 cup Cilantro
1 tablespoon garlic
1/4 cup olive oil
** You can just use balsamic vinegar, but I have all the vinegar (I am obsessed with vinegar) and decided to put some of the plum vinegar in it as well
Additional Ingredients:
Butter Lettuce
Rice Noodles
Carrots
Cucumber
Avocado
