Chicken Potato Croquettes || Crispy and Creamy Snacks || Iftar Special Snacks Recipe - RKC

Ingredients
* Chicken 1 lb, cooked and shredded
* Boiled Potato mashed, 3
* Oil 1 tbsp
* Onion 1, chopped
* Ginger garlic paste 2 tsp
* Green chilies 4, chopped
* Pepper powder 2 tsp
* Salt to taste
* All purpose flour 1 tbsp
* Milk 1/2 cup
* Coriander leaves 1 handful
* Shredded mozzarella cheese 1/2 cup(optional)
For coating
* All purpose flour for coating 1/2 cup
* Egg beaten, 3
* Bread Crumbs 1 cup
Preparation
1. First Cook chicken pieces in instant pot or pressure cooker with little salt and pepper powder. Once it’s ready Just process the chicken in the food processor and set aside.
2. Heat oil in a pan, add onion saute till soft. Add ginger garlic paste, green chilies to this and saute till the raw smell disappear. Add pepper powder and salt to this and mix well.
3. Add all purpose flour to this and cook for a minute or two stirring continuously. Add milk to this little by little and mix well without forming lumps and cook till thick on low flame stirring continuously. Remove it from the flame.
4. Add shredded chicken and mashed potato to this and mix till evenly combined. Add coriander leaves and Leave it to cool at room temperature.
5. Grease the hands with oil to work easily. Take the balls one by one and shape it to croquettes. Repeat the process.
6. First coat them in the all purpose flour, then dip it in egg, and then in bread crumbs, again dip it in egg and then in bread crumbs (double coating makes the croquettes more crispy).
7. Heat oil in a deep pan and fry the croquettes in batches. Serve hot with your favorite sauce.
Note: For Air Fryer : preheat Air Fryer 370 degree F for few minutes. Place the croquettes and spray cooking spray and cook for 12-15 minutes and turn the side and spray cooking spray and cook until it turns golden brown and crispy.
