Any mustard that isn't American-style yellow mustard should work (though use less of hot/spicy mustards). Or grind some mustard seed or get some mustard powder. But it should be perfectly ok without any mustard at all

How do you know she threw them away & didn't just snack on them? This is only for presentation if you're making them for guests. The 30-40% wastage is large chain grocery stores disposing of the food they don't sell. Not from someone cutting some bread crusts off.
