Learn how to make the best chicken schnitzel - crispy on the outside, tender and juicy on the inside. If you are not familiar with this dish, chicken schnitzel (Chicken cutlets) is a pounded chicken breast coated with breadcrumbs. Makes 8 schnitzels
Ingredients:
2 lbs (900g) boneless skinless chicken breasts (4 large breasts)
1 cup (125g) Flour for dredging
2-2½ cups (200-250g) Breadcrumbs, panko or regular
3-4 Eggs
1 teaspoon Dijon mustard, optional
Salt to taste
Pepper to taste
1 teaspoon Paprika
Oil for frying
Lemon wedges for serving
Directions:
1. Cut each chicken breast into two pieces. Place each piece of chicken breast between two sheets of plastic wrap. Use a mallet or a rolling pin to pound the breasts until they are about ¼ inch (1/2cm) thick.
2. Season the chicken breasts with salt and pepper. Set aside.
3. Set up three wide and shallow bowls/plates. In the first bowl place flour, in the second beat eggs with mustard, in the third bowl mix breadcrumbs, salt, pepper and paprika.
4. Start by coating the chicken in the flour mixture first, shaking off any excess, then dip in egg mixture, then coat with breadcrumbs.
5. I a large skillet or pan, heat oil. Once the oil is hot enough place a schnitzel into the skillet and fry until golden brown, about 3-4 minutes on each side.
6. Transfer to a plate lined with paper towels.
7. Serve with fresh salad and enjoy!

First thing I did was Shazam the backing tune and added it to my Spotify playlist. Funky as hell. The schnitzel looked awesome. I’ll be making it for my wife tomorrow. She loves chicken schnitzel. Thanks for the video!

I made them just as you indicated and I was amazed at how they never stuck to my pan which is not a non stick pan and voila they came out moist and extremely tasty.. I highly recommend this recipe!!

I made this a few weeks ago without knowing that this was what I was making. This video is almost exactly what I did. I used blended Doritos as part of the initial flour mix (didn't use extra salt due to the Doritos/tortilla chips) and garlic pepper then unseasoned panko for the second dunking. I let the flour and panko seep in for 5 minutes a pice so it was covered like a mf. Also I marinaded the pounded raw chicken in pickle juice and a few spices including rosemary coz I love it. Best thing I've ever made literally when I made chicken burgers out of it by adding garlic cheese, turkey bacon cut into ribbons and coleslaw and toasted brioche. My sister and niece were all over it like a tramp on chips and so was I to my own surprise. I'm not even a cooking type but I've eaten enough chicken burgers to know what I wanted to taste. I'm doing it again today. Thats some good Schnitz.

I season the egg batter with paprika, mustard, garlic powder, onion powder, chilli powder, sriracha, and soy sauce and it gives it SO much great flavor 👩🏻‍🍳

You can cut 3 slices from each breast, that way they will be thinner and you don't need to bop them flat. Use matzo meal (if you can get it) instead of breadcrumbs for a crispier coating.

Pounding them breaks the fibers, makes them more tender. It's something you can also do with beef, except leave slices much thicker, about 1/2 inch. Dip it only in seasoned flour, fry it, make gravy. Simmer beef pieces in the gravy for awhile. Works on stovetop or crockpot slow cooker. Some people call this Swiss Steak. I've tried it with pork, added partially cooked potatoes (or canned) to cook in the gravy, which was made using cream of chicken soup.

If you're bored with white meat of the chicken breast you could use boneless chicken thighs, the fat tissue of the thigh's red meat are so tasty and juicy the only downside is the ends results wouldn't be as big as this, and don't forget to pressed the meat when applying the panko so you get much more crisps

Yeah the best way, is to freeze the chicken breast. Defrost it, and then coat in bread crumbs mixture and then fry. 🤷‍♂️

Did what this video did. Oil was steaming at times. Somehow, the chicken, even when left for twice the time, didn't reach 165 internal temp.

I would not use that mallet on chicken covered with plastic, because plastic bits could be embedded into the chicken. I understand it's for preventing splatter, but that is not healthy either covering it
