Chicken Shinwari
Ingredients:
- 1 kg chicken pieces (legs, thighs, or breast)
- 2 cup vegetable oil
- 1 teaspoon salt
- 3-4 green chilies
- 1/2 kg tomatoes sliced in half
- 1/2 kg tomatoes, pureed
- 1 teaspoon black pepper
- green chillies and ginger for garnish
Instructions:
1. Heat oil in a large pan over medium-high heat.
2. Add chicken pieces and fry until they start to brown (about 5-6 minutes).
3. Add salt and sliced green chilies. Fry for another 2-3 minutes until the chicken is golden brown.
4. Add sliced and pureed tomatoes and stir well.
5. Reduce heat to medium-low and cook, covered, until the chicken is tender and the tomatoes are soft (about 15-20 minutes).
6. Add black pepper and stir well.
7. Serve hot with naan, rice, or roti.
