A delicious Moroccan classic chicken Tagine. It's both an everyday meal for Moroccan families but also served in engagement parties, weddings, and of course to uninvited guests !!! Chicken, saffron, and preserved lemons. It's a tagine you can smell from miles away !!!
Ingredients:
2 Chicken Legs (400g / 0.9 lbs)
4 Tbsp Olive Oil
8 g (2 tsp) of Butter
Pinch of Saffron
1/2 Preserved Lemon
2 garlic Cloves
2 Small Onions
5 g (1 tsp) of Parsley
5 g (1 tsp) of Cilantro
1/4 tsp Salt
1/2 tsp Pepper
1 tsp Ginger
1 tsp Turmeric
1/4 tsp Cinnamon
2 Medium Potatoes (250g)
150 ml (5 Fluid oz) of hot water
15 Green Olives for cooking
7 Green Olives for decoration

I made your recipe. Turned out good! Added some raisins and apricots to balance the lemony flavor. Me as a south Asian background will need to add jalapeño next time.

Good job bro! Just one tip. I would not use the Oliver oil in the beginning. I would let my children to release all the water and then add Oliver oil for the chicken to soak it. Overall, You are amazing chef. I am in Switzerland 🇨🇭, we need to meet one day to cook together.

Thank you Youssef ! That sauce is both simple and delicious. At least it’s not watered down like in Morocco 😄. My Tagine is 24 cm in diameter. That’s normally a Tagine for 4 people. Mid size I would say ! I hope that helps. Thanks again for watching 😊

What can I substitute for preserved lemons? 🍋 I would like to make this dish, but preserved lemons are hard to find in Denmark. 😅 Thank you.

Super short term solution would be using some lemon juice and lemon zest to marinate the chicken (easy on the zest otherwise you will end up with some bitterness) Long term solution is to make your own preserved lemons because they are super easy to make 😊. Pro tip: if you want your knife to stay sharp, turn it over and use the top edge to slide food across the cutting board.

What brand of olives do you recommend?

Green olives. Any Spanish green olives will do. Just try them first, if they are extremely salty, you might want to give them a light rinse. The sauce has salt and preserved lemons, so you want to be careful with the salt. I hope that helps 😊

Would it be possible to cook this in the tagine in an oven? If so, how would you go about doing it? Thanks

Yes you can. I never used my Tagine in the oven but I would starting cooking on low heat first something around 150 C then end toward 180 C. You will have to take out the Tagine once in a while and mix things so that they burn. You folow the same steps pretty much. Just keep an eye on it. Keep an eye on your sauce levels. Add a bit of water if needed as you cook and at then try to reduce the sauce.

@@hawagiwa4283 for chicken, roughly 20 min for every 500g (1lbs) @ 200C (390 F). But since you take out and check and you cook on lower temperature, I would say minimum is 40 to 45 min.
