This is a lighter version of our favorite morning meal, Tocino. It goes well with rice, fresh tomatoes, and a drizzle of seasoned vinegar. If you're feeling adventurous, add some fried eggs to make it even heartier!
INGREDIENTS:
1 Kg skinless chicken thigh fillet
1 cup water
3 tablespoon oil
MARINADE
¾ cup dark brown sugar
½ tablespoons finely ground white pepper
1 tablespoon rice flour
1 tablespoons salt
3 cloves garlic
1 tablespoon soy sauce
2 tablespoons vinegar
½ cup unsweetened pineapple juice, optional
few drops of red food color, optional
