Chicken zurbian | Zurbian rice recipe | The Cookbook
الزربيان العدني
Ingredients:
Saffron-8-10 strands ( This is optional, if saffron is not available you can use orange food colour)
warm water - 1/4 cup
For rice:
Basmati rice - 3 cups ( wash and soak for 30 minutes)
Salt- 3teaspoon
water-8-10 cups (as needed to boil the rice)
Bay leaves- 2-3
cardamom-4
Cloves-4
Cinnamon stick-1 small piece
For gravy:
Onion- 3 medium sized ( Thinly sliced)
Oil- for frying the onion - 1 cup ( approximately)
Ginger-1 tablespoon (finely chopped)
Garlic-1 tablespoon (finely chopped)
Chicken - 750 g
salt- to taste- 1-2 teaspoon
Potatoes-2
Paprika- 2 teaspoon
Pepper- 1&1/2 teaspoon
Turmeric powder-- 1/4 teaspoon
Coriander powder-1 teaspoon
Cumin powder- 1 teaspoon
Arabic spice mix- 1 &1/2 teaspoon
Yogurt-1 cup
Lemon juice- 1 tablespoon (optional- use only if the yogurt is not sour)
Ghee- 2-3 tablespoon
A small piece of charcoal for smoking the rice.
