CHILE COLORADO CON CARNE: Delicious Recipe Made from New Mexico Red Chile Pods

Chile Colorado Con Carne (Red Chile with Meat) can be made with any kind of meat. In this video, I make it with beef. What makes this recipe so delicious is the chile sauce made from New Mexico Red Chile Pods. Read on for the recipe.
2 lbs. beef or pork, cut into small cubes.
salt to season meat
approx. 2 Tbsp. flour (optional)
approx. 10 New Mexico red chile pods
3 garlic cloves
1 Tbsp. Mexican oregano
1 Tbsp. cumin (optional)
salt to taste (approx. 1 tsp.)
2 bay leaves
Remove stems and seeds from chile pods. Place chile pods in seive with bowl or pan underneath to hold water. Pour boiling water over chile pods and let them soak 15 minutes, allowing them to rehydrate or become soft. Remove chile pods from water, but reserve water for later. Place softened chile pods in blender or food processor. Add garlic cloves, oregano, cumin, and salt. Then take 3 cups of the reserved chile water and pour it into the blender. Pureé until you no longer see flecks of chile circling around the blender and you're left with a smooth red sauce.
In separate bowl, season meat with salt and sprinkle with enough flour to coat the outsides. Mix to combine.
Heat a large saucepan or skillet with enough oil to coat the bottom of the pan. Once heated over medium high heat, add in cut pieces of meat being careful not to overcrowd the pan. You may need to do this in increments in order to allow meat to brown on all sides. Once meat is cooked, pour in red chile sauce and let it come to a boil. Then lower heat, cover, and let simmer additional 30-40 minutes until the meat becomes tender.

My dad was a chef. He had his own restaurant and I would watch him cook. He always added cumin and oregano to his meat. He made great tamales and sold them in town. I was born in Arizona.

Yum, cumin. I can always tell when a dish has no cumin in it because of the bland 1 dimensional taste. Cumin adds so much more depth to a dish. Its rich smokey flavor reminds me of my Tejano father (may he rest in peace). Dad used to make the best Tex-Mex food, our soul food. Whenever we exclaimed how good the food was, Dad would say, “Everything Daddy makes is good!” I miss you Pop.

I have to confess, I have resorted to using red chile powder to make my red sauce. I found the pods to be so inconsistent on flavor and heat. Often times the pods were extremely bitter. I have never tried it with cumin, interesting concept. So glad I found your channel.

There is no difference. In fact a lot of New Mexicans like myself have settled on just buying red chili from hatch in powder form. Easier to store, easier to make but same great flavor

Oh wow! My paternal grandmother was born in New Mexico in 1900, as well. Her birth certificate said Mexico because, at the time, it wasn't part of the U.S. I often tell people, my family never immigrated from Mexico. The border just changed around them. I have always had chili con carn with red kidney beans and rice on the side. Cubed beef etc sounds find, but I like a dish that is easy to eat and doesn't stick in my teeth. I have all my natural teeth at 42 years old. Also I prefer the beans and chilli as it is easy to eat. I have Dysphagia or difficulty swallowing. I can eat cubed meat etc but it feels like it is sticking in my throat and I have to swallow 2 or 3 times. I love your videos though. Don't worry about the people telling you you are not authentic or doing it wrong. They need to realise that food is custom to preference and you should make it how you like it. God Bless you Marcy!

Made this today and, as usual, your recipe was easy to follow and the end result was absolutely delicious. The Mexican food is definitely different in Sacramento, and I found I had to cook myself if I was craving certain dishes. My favorite Mexican restaurant when I lived there was Novilleros. Is it still open?

I could absolutely eat this every day. There was a place two blocks from my house that made the best I ever had. They also used tomatillos in the sauce. Went down one day and they were closed. Apparently the DEA and FBI showed up and arrested everybody. Guess those wonderful peppers were not the only thing they were shipping from New Mexico

I enjoy your channel and trying different versions of our already NM favorites. Wondering if you ever use red chile powder instead of pods? There are some great NM dry powders. If so, it would be interesting how much powder to # of pods. My family uses the red chile powder most of the time. One difference we have is we cook our meat and add the flour once browned. It soaks up the grease really well.

I get that alot on my recipes on the subject of cumin. Every chef I know in albuquerque uses cumin as do I. Chili is not the same with out it. So one day i asked spice world what are the top spices sold in new mexico? #1 cumin #2 coriander #3 garlic powder #4 onion powder. PS marcy that dish looks very good .

I agree with the cumin. I love the taste of it. My go to seasonings for Mexican dishes are salt/pepper garlic and cumin also depending on what I’m making oregano. I have a question, what size Dutch oven do you use? Love your authentic dishes. Saludos from El Paso.

You really can't go wrong with any of them, but I recommend Grajeda Hatch Chile Market. They have a great selection of dried chile pods as well as all kinds of spices. Their red chile powder is my favorite. Make sure to eat at Sparky's while there, and order their green chile cheeseburger.

They absolutely will grow, though I haven't planted them myself. When I was growing up, my neighbor would make chile and throw the seeds out her back door. Next thing you know, she had an unplanned chile plant growing right at the step to her back door! Lol But, it depends on the soil where you live.

Sorry Carne Adovada is not fixed that way Im from N.M. you have to mix the pork with oregano and chile ,put it in the fridge for a couple of days to marinade. Then cook it the way you want, but it has to marinade!

Other than than the name Mexican Red Chili pods what is the actual name of the chili pods,there are alot of red chili's out could you narrow it down ?

The technical name for any red chile grown in New Mexico is "Capsicum Annuum," but you'll be hard pressed to find that on any packaging. You will only find the location of where it was grown, and whether it's hot, medium, or mild. It will either say "Anaheim," if it was grown in California, or it will say "New Mexico." While they look very similar, the NM chile is more earthy and flavorful, and also tends to be a bit hotter. In addition to that, different areas of New Mexico like to boast that their red chile is best. For example, you may find red chile labeled as being from "Hatch, NM" or from "Lemitar, NM." So long as it says New Mexico, you can't go wrong. It has to do with the soil. Another way to know is, in New Mexico, chile is always spelled with an "e." I hope this helps. I'm sorry I couldn't narrow it down any further for you.

Question: is this supposed to be extremely spicy? I ordered this at the restaurant and it tore my throat up 😂! I wasn’t prepared… the waiter looked at me like r u sure u want Chile Colorado. I was like yes sir. I didn’t know it was fire breathing dragon hot! I thought it was like enchilada sauce.

I never put onions in red chile sauce because I don't want it to overpower the chile flavor. I'm sure there are those who do add it, but I only add garlic. You can always add onions to your dish later. Like when I make enchiladas, I'll add chopped onion in the enchiladas, but it's not in the sauce.

I juat stared watching your videos. Started with the picadillo video. You must be from NM? You make the food like i am used to. Have moved to texas and there is NO NM stryle food to be found
