Hi Claudia, this looks wonderful, in the version I've made I par bake the first layer of egg batter for 4 or 5 minutes to firm it up then add the other layers, this prevents the chiles from sinking to the bottom of the dish from the weight of everything on top. My favorite cheese to use for Chile Relleno is Queso Chihuahua. Also, I'd like to see you make a video teaching people why a chile Poblano is not called a Pasilla, a chile Pasilla is a dry version of a fresh chile Chilaca. Here in California they have the names of the Chiles all mixed up, they call a Poblano a Pasilla. At the grocery store I've seen packages of Ancho Chiles labeled dry Ancho/Pasilla then there's packages of true Pasilla dry chiles right next to it. In Mexico City a Poblano is called a Poblano and not a Pasilla, people in California will argue with me about it. What's funny is the California growers association calls a Poblano a Poblano and not a Pasilla. The problem is this name change from Poblano to Pasilla has started to move east in stores and restaurants in Colorado, Arizona and New Mexico.
One of my favorite Mexican dishes are Chile rellenos. This casserole looks amazing especially the fact it’s not fried and has egg for protein. Would be great to freeze individual portions for a quick midweek dinner. Thank you for sharing!

Bought the ingredients to make this and excited to try! Only thing I would suggest is to NEVER - EVER separate your eggs from the shell or otherwise directly over your already separated egg whites. Just one molecule of the egg yolk will stop the ability for egg whites to firm and always use 3 bowls. One for the whites, one for the yolks, and one for the actual separation in case the yolk breaks.
Hasn't ever been a problem for the hundreds of egg whites I've beaten by hand for whole wheat waffles in the last 30 or so years. A little bit won't hurt at all.
This was so amazing! I made everything just like you showed us … the two salsas were so perfect. I found a trick: I use my air fryer to cook the poplanos and it’s much less messy than the stove. Thank you so much! I’m an expat from Arizona living in Mexico and love learning new recipes from you. ❤
I made this tonight it took longer than I planned but OMG The best chili relleno I’ve had. Sadly I didn’t make the sauce but will give it a go the next time. BEST EVER!! ever. I will make these again I will just allow more time for prep work.
This is a FANTASTIC recipe! I also enjoyed some leftovers in a toasted corn tortilla with fresh salsa for breakfast. And, the tip in one of the comments to char the peppers in the air fryer is WONDERFUL!
Woooo, look what you did - I do love casseroles, haven't had Chile Rellenos but figured I'd love it, & I think I would certainly love this casserole. I love how Mexican food seems to automatically come with a presence of awesome yumminess.
I have them in the oven now! What a lifesaver. I had completely spaced it and didn’t have any oil for frying them the usual way. So baking them was brilliant ❤ Your recipes have never ever let me down 😬
Like always beautiful Claudia, you bring a simply delicious chile Relleno Casserole. Keep going mija this is an easy great tasting recipe. Tip: you can char the chiles in your air fryer, set on rack 375 for 5-8 minutes. Flip and add another 5 minutes..
What I love about this recipe is no frying oil and mess, bet you can do tortas de camaron con nopalitos this way too. Great idea, I gave those both up because of the frying. I got them back on my menu now, thanks to you.
I made this casserole. It came out ok. I used monterey jack. It was all I had. Cleaning and prepping the poblanos is a chore all by itself. I made the salsa and those red peppers are super, super HHOTTT!! I will be carefulling next time with those bad boys. Great recipe. Pro tip: do not let any yoke into the white when whipping the whites. The protein causes breakdown and they don't stiffen. Thanks for the vid.

This looks easier and maybe even healthier than traditional fried chiles rellenos. I’ve always been intimidated by the traditional recipe, I am going to try this one.
Also cutting the cheese in half would be an even healthier option as well. Still way too high in saturated fat, salt,. It looks really yummy but just couldn't eat this much fat & cheese.
My mother was from Maine but moved to California and one of her favorite dishes was Chile Rellenos! Thank you dear! It's hard to fry in my RV so this is a great alternative! I try to be healthy and bake stuff rather than fry it! Gonna add this to my regular menu! I do baked eggplant parmesan, baked mushrooms (rather than fried), and this is similar to stuffed zucchini boats! YUM!
We just got done eating. Only thing different was I put habanero chili peppers for the sauce for my husband. He ate two big portions so he liked it. Will make again. Thank you.

I fell in love with chili rellanos when I lived in Colorado. It was my go to meal from a small Mexican restaurant down the street from my house. Since I left CO, I have yet to find a restaurant that makes them nearly as good. I can't wait to try this!! Thank you!

I have previously stuffed my Poblanos with a meat filling... ground Chicken or beef (seasoned properly) and topped with a cheese sauce when they come out of the oven. Served over a bed of white rice. Mouth watering.

Seriously this looks super delicious. I’ve been making your recipe for chili rellenos & it turns out delicious, but it’s a lot of work, and I’m not really a fan of fried food. I was wondering if I could make a casserole instead so this is perfect because I do love the taste of this dish so much.

My mom used to make this. She wasn't much of a cook, like at all, but this was good. Of course, she used canned chiles. The hardest part was grating all the cheese. LOL! Miss her and her meh cooking 😂

This recipe is so good, just want I've been looking for. Just made it for our dinner tonight and it was great. Halved the recipe for two of us, and I filled the chiles with chorizo and cheese. Used poblano chiles that I roasted this morning.
