This Homemade Chilli Oil is the simplest, easiest yet the closest you could get to Sichuan's flavours. Having the Chilli oil on hand will reduce your cooking time by half and elevate the flavor of literally any dish. With a long shelf-life and flavors deepening with age, this Chilli oil could be your next best friend right in your kitchen.
Ingredients (in order as mentioned in video)
250 ml / 8.5 fl oz Any Neutral tasting Oil
(I used sunflower oil)
20 g or 1/4 cup Asian Chillie Flakes
2 Star Anise
2 Green Cardamom (crushed mildly with skin intact)
1 Black Cardamom (also crushed)
4 Cloves Garlic (bruised with skin on)
1 Inch Knob Ginger
5 Cloves
1/4 Red Onion
1 tsp Sichuan Peppercorns
3/4 tsp Fennel Seeds
2 Bay Leaves (2 more optional)
4 Inch Cinnamon stick
4 Inches Cassia Bark (optional)
2 tsp Mildly Chilli powder /Paprika/Byadgi
1/2 tsp Salt
