Have a favorite type of noodles? We travel to some of China’s top noodle-making regions to see how they still knead, pull, and cook everything by hand. Featuring: Lanzhou’s hand-pulled noodles, Xi’an’s biang biang noodles, Shanxi’s “cat ears” noodles and oat noodles.

I like the hand pulled noodles. We have some great Chinese restaurants in Auckland NZ where I’m from and I love watching them pull the noodles. Would love to try them all at some stage ❤️🍜

One thing fanscinating about Chinese noodles is they are mostly hand-made.

As an avid cook of Chinese origin I found this Very interesting. I make my own home made egg noodles that my parents taught me to make with the aid of a very old hand cranked noodle machine. Also interesting is the tomato garlic sauces eaten with the noodles. I thought it was a purely Italian thing, but then the Italians learnt to make pasta from the Chinese (brought to them by Marco Polo).

We live close to San Gabriel Valley area (Los Angeles) and blessed with all regions of China. I used to not like noodles because what I used to have not authentic Chinese noodles until my husband introduced me to real authentic handmade noodles and I’m addicted to Chinese noodles. The first freshly made noodles my husband introduced me to was noodles made with bamboo sticks. It was fascinating to watch the man jumping on the bamboo stick. Sadly, it was closed down. Do you mind to share your noodles recipe? Thank you

@@gchow6009 Beat eggs lightly (the rule is one egg per person) add 1,5tsp oil, a bit of salt. Add flour (preferably half bread & half all purpose flour) until dough forms that is not so sticky. Flour your work surface & knead. Keep adding flour & knead until dough forms a smooth pliable mass that 'springs' back when lightly pressed using your finger. I can't tell you how much flour to use as I do it by feel. Cut your dough into sections & dust each section with cornflour. Flatten each section so that it is easier to roll through your noodle machine. Starting with the widest setting, roll each section of dough through your machine until you get your desired thickness. Your dough will now be long strips. Roll each long strip through the cutting section of your machine. You will now have home-made noodles. Dust liberally with cornflour & toss them a bit so that the strands don't stick to each other. Cook in boiling water with a bit of oil & pinch of salt. You can freeze the noodles, but make sure you spread them out & separate each portion with a sheet of cling film. Do not defrost when cooking. Take your noodles straight from freezer to pot of boiling water or defrosted noodles will become a soggy mess. There are RU-vid videos showing how to make homemade noodles.

I'd love to visit all these regions mentioned in the video and try the noodles where they're made. I only know South Eastern style Chinese noodles, which is still a lot of styles.

I am amazed at how these chefs are loyal to one particular recipe. At where I am, menus are new each season. Right when you liked something and got used to it it disappears.
