Baijiu's reputation precedes it in the Middle Kingdom. Its sharp taste and high alcohol content -- coupled with a history of people expressing generosity by enthusiastically persuading guests to have more -- have led to a bit of a fearsome name for the spirit. But baijiu is the most widely consumed hard liquor in the world, and that many people can't be wrong, right? I'm hoping to ease into it gradually though...so I stopped by a bar that's encouraging people to experience baijiu in a different way -- in the form of the mighty cocktail.
