I'm not Chinese, but my college roommate was (is, actually!). My introduction to Chinese food past the Jewish versions I grew up with came from Bob, and better, his parents. Intro to Black Bean was Blue Crab with Black Bean sauce in New York Chinatown 1968. Clams came shortly thereafter, and are MUCH easier to eat. My small suggestion: CHOP the black bean after soaking for about 15 minutes. Much, much better flavor, which improves logarithmically if you add 50% by volume of freshly chopped ginger. I've never seen clams (or any black bean dish) done with chili peppers. Pretty colors, but my wife won't approve. That said, I think I know what's for dinner tomorrow. Thanks!
Hey Wally, it’s been a while. Love Wo Hop’s. Haven’t been there in years as I live in South FL. This dish is one of my favorites. Prices here… $17.95 for six BBQ Spare Ribs. $12.95 for Six Steamed or fried pork dumplings… ouch. In today’s (8/19) NY Post an article says Chinatown may no longer exist because the NYC that we knew is no longer. The city is planning to build the worlds tallest jail in that neighborhood. Hope not. Will you make Suey Kow Dumplings????
Hey what's up!? I went back to NYC few months ago. Bought some har gow and siu mai, cost me $14 lol, yeah the prices are no joke these days. Neighborhood definitely not the same. Though in Flushing the Ctown is bustling!

I never tried with mussels. I did with razor clams though. Thing about mussels is it has more mineral seafood taste. But overall I think this will work with mussels 👍

Wally, another great dish. I mentioned this before, but when I lived in the City, my #1 place was Wo Hop, down in the basement. Living in Western PA I don't get back there very often. Have you eaten at Big Wong on Mott St? Love that place too. Thanks.
Yes of course, Big Wong is awesome! When I was a teenager I used to visit Poco nos during summers. My friend’s parents had a house there. Had a lot of good memories 😄
