Chinese New Year Cake（年糕) in the Instant Pot - Instant Pot New Years Cake - Instant Pot Chinese dessert
Ingredients:
1.5 cups Glutinous Rice Flour (sweet rice flour)
1/2 cup Wheat Starch
3/4 cups Brown Sugar
1/4 cups White Sugar
3/4 cups Water, cold
Directions:
1. Combine dry ingredients
2. Add water to dry ingredients and mix.
3. Pour batter into foil tray (spray/thinly coat pan with oil first).
4. Open lid, place trivet and 2 cups of water, then tray of batter.
5. Close lid. Select Steam for 30 minutes
6. When done, quick release.

can't wait til try this with my new Instant Pot. Have you tried it using some coconut milk?

Yes! That's also an option! You can replace the water with coconut milk or do half and half (water and coconut milk).

Angela, thank you for sharing! Do you think it's possible to steam two trays at a time? I usually use the round tin foil, same height as pie, but small in diameter.

Hi George, Yes! I've done two trays stacked (just put a trivet inbetween). It's worked, but I think you would need to cover the one on the bottom with foil as some of the water/steam gets onto it.

Angela, I followed your recipe but the paste is so dry. So I added much more water than 3/4 cups. I wonder why.

I’ve watched some other recipes and they call for coconut milk. Do you think it is needed?

Hi Teresa. It’s not a must but if you like coconut, you can substitute part of the water with coconut milk. I do this when I have it in my pantry

Hi Daniel, It's definitely not really sweet. My recipes tend to be less sweet in general as I don't like an overpowering sweet taste (or the sugar headache that would follow)

Can I use corn starch instead of wheat starch?

Hi Amabelle, Yes, you probably can, but I would think you would need less cornstarch. I haven't ever tried substituting so I'm not quite sure how much cornstarch you would use.
