Hong shao qie zi, it is a very popular Chinese eggplant dish all over China. If you like eggplant, then this is a great recipe you must try. If you hate eggplant, I think you should still try- it’s really delicious and you might like it =)

*INGREDIENTS*
*FOR STIR FRY*
1 large long eggplant [1 个大的长茄子]
Some red pepper [适量红椒]
Some green pepper[适量青椒]
1 tbsp of minced garlic [1汤匙蒜末]
1 tbsp of minced ginger [1汤匙姜末]
Some spring onion and coriander for garnish [葱和香菜做点缀]
Enough oil to fry the eggplant [足够的油用来炸茄子]
*FOR THE SAUCE*
1 tbsp of minced garlic [1汤匙蒜末]
2 tsp of light soy sauce [2茶匙生抽] [Pearl River Bridge Natural Brewed Light Soy Sauce: geni.us/wABlLXf]
1 tsp of dark soy sauce [1茶匙老抽] [Pearl River Bridge Superior Dark Soy Sauce: geni.us/T4vy]
1 tsp of sugar [1茶匙糖]
1 tsp of black vinegar [1茶匙陈醋] [Zhengjiang black vinegar镇江香醋:geni.us/Bqw98A]
1/2 tsp of cornstarch [1/2茶匙生粉]
3 tbsp of water [3汤匙水]
*HOW TO COOK*
- Cut the eggplant into strips. Season it with some salt for 20 minutes. I used about 1/2 tsp.
- Cut the red/green chili into small chunks.
- And have some diced scallion and cilantro for garnish.
- Make the sauce, 1 tbsp of minced garlic, 2 tsp of light soy sauce, 1 tsp of dark soy sauce, 1 tsp of sugar, 1 tsp of black vinegar, 1/2 tsp of corn starch so the sauce can be a little thick and 3 tbsp of water. Mix it well.
- Add enough vegetable oil into the wok. Use medium heat to fry the eggplant until soft. You can test the temperature with 1 piece of eggplant. If you see a lot of bubbles. That is perfect.
- Take it out and set it aside.
- Leave 1 tbsp of oil in the wok. Stir fry stir fry the ginger, garlic and the chilies for 3 minutes or until fragrant
- Pour in the sauce we made before. Stir fry for 1 minutes and you will see the sauce is getting a little thick.
- Add in the eggplant. Give them a nice mix.
- Don’t cook it too long, because we already fried the eggplant. Once you see the sauce is almost gone, turn off the heat. Garnish it with some spring onion and coriander. You are done.

I made this tonight :) had it as a (rather large) side dish with some sweet chilli, and lime infused salmon fillets... Boy it was delicious. I really like aubergine (eggplant), and can imagine this going with most meats and fish. Well worth a try. I'll be making this again, definitely.

Back again after posting 4 years ago! Still making this recipe often, following with all the same ingredients. The only change is that I have added tofu to this dish for the protein. I use firm tofu, cut up in bite size pieces, roll in corn starch and fry. I add the cooked tofu at the same time I add the fried eggplant. So delicious!! Thanks again for your wonderful recipe and for your channel.

I first saw how very few ingredients there were and thought it wouldn't work out but I tried it and you definitely proved me wrong. It was soo delicious and thats coming from someone who doesn't like brinjal, everyone in my family devoured it. Its a must try for anyone regardless of whether you like brinjal or not.

New subscriber here. I love your channel! I just finished making this recipe. WOW, so delicious! I didn’t have black vinegar so I substituted UME Plum vinegar. Also, I only had green Thai chilies. It didn’t matter. It was still fabulous and I will cook again. Thank you for this recipe!

I make this recipe often. Sometimes I substitute the green chili with green or long beans. It’s also nice to add in a little firm silken tofu. I let it rest 5 minutes if I do this so the tofu can absorb the flavors and add in 1-2 extra tbs of water so it’s easier to stir. Yummy.

Just made this love it except now sure I went wrong needed to add a bit more salt. I'd added some onions and tofu just cause didn't want to waste it but love this recipe. I'd also added a dash of vinegar for acidity.

I just bought a lot of eggplant, and was looking for something to do with it, this is it! thank you for another wondeful meal! Yesterday I made the egg foo young recipe but I turned it into general tao foo young!! What a meal! Spicy and delicious!! Sooo good....

Souped Up Recipes. To be honest I just buy a jar out of my local Chinese market , I am unsure of the differences between the Thai style one. I made this dish, but I added ground pork, because my husband wouldn't eat it if it doesn't have meat, lol, we loved it, including my mom. I'm not a fan of eggplant, but I must say the eggplant in this dish was delicious! Please make more videos!!!

Will do this dish tonight for vegetarian friends. This is one of the best cooking shows I've found on you tube. Recipes are all simple and superb. Lots of great technique tips too. You are informative and delightful to watch. Keep it coming. One question about this eggplant dish ... You call for chilis. Do you mean hot chilis? Or sweet peppers?

You can use hot chili to spicy it up or just use non-spicy pepper. It depends on your preference.

Let me share my bean sprout recipe. Serving for 2; About 300g of bean sprout washed and drained overnight, about 200g of fried tofu (slice about half cm thick) and about 50g of garlic chives( wash, drained and cut into 5cm long). Fry your bean sprout for about 1 min on medium heat, add in tofu and chive then fry for another 1, by now everything should be about 80% cook. Add your seasoning; About 1tbspoon of oyster sauce, 1tspoon of light soy sauce and about 1 tspoon of pepper and about 1 tbspoon of cornstarch mix with about 5tbspoon of cold water. After adding your seasoning in, keep stirring constantly so it doesn't form a clump from the corn starch and until it thoroughly mixed, then it done. This recipe is very simple and healthy, which i something eat by itself without any sides or rice. As this is home cooking, so all ingredients are approximate to your desire. bean sprout 300g fried tofu 200g garlic chive 50g oyster sauce 1tbs to 1.5 light soy sauce 1ts pepper 1ts corn starch 1tbs cold water 5tbs

Looks good. I will try. I don't have black vinegar, can I use Apple cider vinegar, rice vinegar, balsamic vinegar or white vinegar? Which do you think would be the best substitute?

love all the video so far, i tried Mapo tofu the other day and it was good! no more buying horrible pre-made sauce! just some suggestions, i think it'll be easier if you list the ingredients in both English and Chinese. i tried to ask my Chinese boyfriend for some sauces but he doesnt know from the English names. I imagine if people in China try to find the ingredients, it'll be nice to have a Chinese name for the ingredient so at least they can ask if they dont know what it is. another thing is it'll be nice to see what is optional and what not, or if there can be substitute. i want to make certain dishes but i'm not sure if some missing ingredients are okay or if i have something in hand that can replace it because i dont want to give up cooking the whole fish! i'm looking forward to more of your videos so i can cook for my boyfriend :D

What can be used instead of soya sauce? What's the benefit of adding vinegar and soya sauce? I'm a non Chinese, so I don't know much about the spices used here. But I try to skip or use less vinegar/soya sauce in my cooking if it’s not that much necessary.

are those hot chilis or sweet, or both? I just had a wonderful eggplant dish at one of our last remaining old chinese restaurants in DC's chinatown - Eat First! stuffed eggplant with shrimp and black bean sauce, yum! Do you have a black bean sauce video? I couldnt find one. Love love love watching you cook. I'm not as advoenturous a cook as I used to be - but I always use garlic, ginger and scallions.

i try this recipe and goodness i find eggplant does absorb alot of oil and flavor for my liking, but glad i try it still. Next time i will just by-pass deep frying by dicing the eggplant and shallow fry instead with mince then add in the sauce and simmer.
