CHIPOTLE RANCH BITES
Ingredients
Boiled and mashed potatoes 2 cups
Cream cheese 3 tbsp
Cream 2 tbsp
Butter 1 ounce softened
Milk ¼ cup
Salt & pepper ½ tsp each
Chipotle chili sauce 2 tbsp
Chicken powder 1 tsp
Sour cream 2 tbsp
Mayonnaise 2 tbsp
Onion powder ½ tsp
Garlic powder ½ tsp
Oregano 1 tsp
Ingredients to Coat
Flour as required
Beaten eggs as required
Bread crumbs as required
Crushed chili chips as required
Oil for deep frying
METHOD
Mix together all the ingredients for mashed potato mixture and mash well, make small bite size balls, mix together bread and chips crumbs.
TO COAT
First roll each ball in flour then in beaten eggs, finally in bread and chips crumbs, deep fry.

SHAWARMA GRILLED WRAPS
Ingredients
Boneless chicken julienne 300 gm
Marination
Garlic 1 tsp
Soy sauce 3 tsp
Oil 2 tbsp
Vinegar 2 tbsp
Black pepper 1 tsp
Chili powder ½ tsp
Roasted and crushed cumin ½ tsp
Salt ½ tsp
Vegetables
Onion 1 cut in sticks
Beetroot cut in sticks ½
Cucumber cut in sticks 1
Cabbage julienne 1 cup
Sugar 1 tbsp heaped
Salt ½ tsp
Vinegar ¼ cup
Oil 1 tbsp
Ingredients for White Garlic Tahini Sauce
Yogurt ½ cup
Mayonnaise 3 tbsp
Tahini sauce 2 tbsp
Chopped garlic 1 tsp
Mint leaves chopped 2 tbsp
Lemon juice 1 tbsp
Salt & pepper ¼ tsp each
Water as required to mix sauce
To Assemble
Tortillas 4
METHOD
Marinate chicken and cook in 2tbsp oil till chicken tender, toss vegetable in salt, sugar and vinegar, cook beetroot separately so it doesn’t spoil color of other vegetables, cook on high flame for 2 mins, blend together ingredients for sauce, spread sauce on tortillas, put chicken and vegetables and roll up, place on a grill pan with little oil, grill on both sides pressing with a slicer.

MANGO SWIRL CHEESECAKE
Ingredients
Digestive biscuits 2 ½ cups crushed
Butter 3-4 ounce melted
Ingredients for Cheesecake filling
Mango puree 1 ½ cup
Cream cheese 2 packets
Lemon juice 2 tbsp
Tetra pack cream 200 gm
Condensed milk 1 cup
Mango jelly 3 tbsp
Vanilla essence few drops
Whipped cream 1 ½ cup
Gelatin 2 tbsp dissolved in ¼ cup warm water
METHOD
Mix together biscuit crumbs, butter, press down in a 9 inch round spring form pan, place in the oven on 180 D for 10 mins, remove and chill in freezer, prepare the cheesecake filling by beating cream cheese, tetra pack cream, lemon juice, essence, condensed milk until smooth, add half mango puree and beat it well. Now beat in mango jelly crystals, dissolved gelatin and finally whipped cream, pour the cheesecake mixture over the base, add dollop of remaining mango puree, use a knife or skewer to create a swirl of butter cheesecake, put in a fridge and let it set for few hours before serving.
