Shaulan prepares a beautiful Chirashi sushi bowl with chu-toro, langoustine, mackerel, red mullet, trout roe, scallop, and sea urchin, using a special rice and vinegar he brought back from his recent trip to Japan.
Chirashi sushi, also known as “scattered sushi,” is a vibrant and colourful Japanese dish that features a variety of sashimi and toppings artfully arranged over a bed of seasoned sushi rice. It often includes slices of fresh fish such as tuna, salmon, and shrimp, along with vegetables, pickles, and garnishes like nori and sesame seeds. This dish is celebrated for its versatility and beautiful presentation, making it perfect for showcasing seasonal ingredients and offering a delightful combination of flavours and textures in each bite.

did he soak the rice for 10 minutes or wash it for 10 minutes (with a lot of draining of water)?

Washed for 10 minutes, leaving the tap on as low as possible.

just to clarify, it's washed for 45 seconds and the tap was running to clear the water for the remaining 10 minutes. Adjust the total time depending on the amount of water the rice absorbs - the rice should take on a maximum of 100g of water per 500g of dry rice.
