Chocolate Chunk Hazelnut Muffins
Ingredients
Makes 12 muffins
2 cups (280g) all-purpose flour
1 1/2 tsp (6g) baking powder
pinch of salt
1/2 tsp (2g) baking soda
1 large egg
1/2 cup (100g) granulated sugar
1 tsp (5g) vanilla extract
1/3 cup (80ml) vegetable oil
1 1/4 cup (300ml) milk
2/3 cup (100g) milk chocolate chunks
1/3 cup (50g) coarsely chopped hazelnuts
Chocolate Glaze
3 oz (80g) melted dark chocolate
1/4 cup (60ml) hot whipping cream
2 tbsp chopped roasted hazelnuts
INSTRUCTIONS
1. Preheat oven to 350°F (180°C) and line muffin tin with 12 liners.
2. Whisk flour, baking powder, baking soda, and salt together in a medium bowl. Set aside.
3. Beat egg and sugar with an electric mixer on high speed for about 2-3 minutes, or until mixture has thickened and turned a very pale yellow. Add vanilla extract, and vegetable oil.
5. Gradually add dry ingredients while alternating with milk and mix on low speed until well combined.
6. Fold in chopped hazelnuts and chocolate chunks.
7. Divide batter among 12 muffin liners, filling each ¾ full.
8. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean. Once baked, leave for 5-10 mins, then remove from muffin tins and let completely cool.
9. Make the glaze. Heat the cream in a small saucepan over medium heat until it begins to gently simmer. Remove from heat and pour over the melted chocolate, stir until completely combined.
10. Once the muffins are completely cooled, dip the top of the muffin into the chocolate glaze, then sprinkle the chopped hazelnuts over the tops. Place on the cooling rack to let the top set. Enjoy!
