Chole Bhature Recipe
Ingredients for Bhature:
- 2 cups all-purpose flour
- 1/2 cup granulated wheat
- 1 teaspoon salt
- 1 cup yogurt
- 1 teaspoon baking soda
- 1 tablespoon oil
Ingredients for Chole:
- 250 grams chickpeas (soaked overnight)
- Water (enough to cover chickpeas in the pressure cooker)
- 1 bag of green tea
- 1 teaspoon salt
- 1 cup tomato paste
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- 1 teaspoon cumin seeds
- 2-3 cloves
- 1 black cardamom
- 1 cup yogurt
- 1 teaspoon dried fenugreek leaves (kasuri methi)
- Oil (for cooking)
- Onions and pickle (for serving)
Steps:
Bhature:
1. Step 1: In a large mixing bowl, combine 2 cups of all-purpose flour, 1/2 cup granulated wheat, and 1 teaspoon salt.
2. Step 2: Add 1 teaspoon baking soda and 1 cup yogurt. Mix well.
3. Step 3: Add 1 tablespoon oil and knead into a smooth dough.
4. Step 4: Cover the dough and let it rest for at least 1 hour.
5. Step 5: After the dough has rested, divide it into small balls.
6. Step 6: Roll out each ball into a small puri (about 6-7 inches in diameter).
7. Step 7: Heat oil in a deep fryer or large pan.
8. Step 8: Deep fry each puri until they puff up and turn golden brown.
9. Step 9: Drain on paper towels and serve hot.
Chole:
1. Step 1: In a pressure cooker, add the soaked chickpeas, enough water to cover them, 1 bag of green tea, and 1 teaspoon salt.
2. Step 2: Pressure cook for 5 whistles. Remove the tea bag and set the chickpeas aside.
3. Step 3: In a bowl, mix 1 cup of tomato paste, 1 teaspoon turmeric powder, 1 teaspoon cumin powder, 1 teaspoon coriander powder, 1 teaspoon garam masala, and 1 teaspoon red chili powder.
4. Step 4: In a large pan, heat oil.
5. Step 5: Add 1 teaspoon cumin seeds, 2-3 cloves, and 1 black cardamom. Sauté until aromatic.
6. Step 6: Add 1 cup of yogurt, stirring constantly to avoid curdling.
7. Step 7: Add the tomato paste mixture and cook for a few minutes until the oil separates from the masala.
8. Step 8: Add 1 teaspoon dried fenugreek leaves and stir.
9. Step 9: Add the boiled chickpeas to the pan.
10. Step 10: Mix well and let it cook for 15 minutes, allowing the flavors to meld. Adjust salt to taste if necessary.
*Serving:*
1. Step 1: Serve the hot Bhature with the Chole, garnished with onions and pickle.
