Chole
Chole, also known as chana masala, is made from chickpeas cooked in a spicy and tangy tomato-based sauce.
Ingredients 1
Dry roast the below mentioned ingredients
1 tablespoon of coriander seeds
1 teaspoon pepper corn
1 teaspoon Fennel seeds
1/4 teaspoon carrom seeds/ ajwain
1 teaspoon cumin seeds
1 bay leaf
1 black cardamom
2 green cardamom
1/2 inch cinnamon stick
Dry grind to a powder the mentioned ingredients along with 1 tablespoon dry Fenugreek leaves/ dry kasuri methi leaves
Ingredients 2
2 medium size onions
1 green chilli
Grind all the above to a paste
Ingredients 3
350 of grams of tomatoes and puree
( Approximately 4 tomatoes)
Ingredients 4
1 teaspoon chilli powder
1/4 teaspoon turmeric powder
1/2 teaspoon dry mango powder/ amchur powder
1 teaspoon garam masala powder
1/2 teaspoon nutmeg powder
1 teaspoon of jaggery powder or sugar
Ingredients 5
250 grams of chickpeas
Soak overnight with just enough water. Then pressure cook with salt to taste and enough water. Pressure cook on high flame. After the first whistle lower the flame and pressure cook for 20 to 25 minutes. Reserve the cooked chickpea water for further use.
1 tablespoon of ginger garlic paste
1 tablespoon dry Fenugreek leaves/ dry kasuri methi leaves
1/4 cup finely chopped coriander leaves
Method
Heat up some clarified butter/ ghee. Add the onion paste and stir fry till it turns lightly brown.
Then add the tomato puree and some of the chickpea water. Allow to cook for 2 minutes, stirring occasionally.
Add the dry ground spice powder (ingredients 1) and dry spices ( ingredients 4) , ginger garlic paste and mix well. Add some of the chickpea water and allow to cook for 2 minutes.
Add the cooked chickpeas, jaggery powder or sugar, salt to taste. Cook for another 2 minutes.
Finally add the dry kasuri methi and finely chopped coriander leaves. Cook for another 2 minutes.
