I used to work at a Mexican grill. We made beef, chicken, and veggie empenadas, tacos, burrito bowls, Chimichangas, etc. It was all soo good. When I worked there it was my first time having chorizo bc we can add that in tacos or bowls. I normally eat my tacos and bowls with Carne asada but when i first had chorizo I was in another world.

As a Filipino, I eat longanisa. It’s similar to chorizo and they’re both pretty good. If you haven’t tried longanisa, I recommend it.

Chorizo Sandwich/Torta~ I cook my chorizo to where it has a few crispy pieces but not burnt. Then I get my pepper jack cheese and put everything together on a nice roll or even some just normal sliced bread and boom perfect. Also I do one with over easy eggs on top of the pepper jack cheese then the chorizo with toasted slices of white bread and it comes out great. Sometimes also I put some banana peppers on it also.

Dudes...I totally identify with your senses! My father used to make this on Saturday or Sunday mornings for us kids in the late 60s and early 70s when he was off work. I'd hear him get up early in the morning to the sound of chopping onions and potatoes and mixing eggs, (chop, chop, chop). A few moments later...the whole house was filled with the wonderful aroma of "chorizo paradise" as you describe. "Time for breakfast" he would shout...
