Chouriço Caseiro
15 lbs pork shoulder cubed
½ cup chopped garlic
1 cup spice malagueta
2 tbsp paprika
4 tbsp kosher salt
3 cups burgundy wine
Sausage casing
In a large bowl, add pork shoulder, garlic, malagueta, paprika,wine and salt. Mix everything well. Cover and put the bowl in the fridge overnight. Next day fry a few pieces to test for salt and spice,add more salt or pepper if needed. Put your casing on funnel and insert meat into funnel. If you see pockets pierce with a pin and push meat to make a tight chouriço. Tie the ends and twist the middle to form the links. Place the links in the smoker for a few hours. When the color has become dark and the link has shrunk in size, it is ready to remove from the smoker. Cut the tips and let cool. When cool, place in ziploc bags or sealer bags.

3 xícaras de vinho Borgonha
Invólucro de salsicha
Em uma tigela grande, adicione a paleta de porco, o alho, a malagueta, a páprica, o vinho e o sal. Misture tudo bem. Cubra e coloque a tigela na geladeira durante a noite. No dia seguinte, frite alguns pedaços para testar o sal e os temperos, adicione mais sal ou pimenta se necessário. Coloque o invólucro no funil e insira a carne no funil. Se vir bolsos fure com um alfinete e empurre a carne para fazer um chouriço bem apertado. Amarre as pontas e torça o meio para formar os elos. Coloque os links no fumeiro por algumas horas. Quando a cor escurecer e o link diminuir de tamanho, ele estará pronto para ser retirado do defumador. Corte as pontas e deixe esfriar. Quando esfriar, coloque em sacos ziploc ou sacos seladores.

This is amazing !! I live in Minnesota but I am first generation Portuguese and no longer have access to authentic ingredients. I make pimenta moída and pripri and a lot of food at home . We have no chouriça portuguesa

Hello love your channel I have a question you dont tie your chourico do they come apart for example in a pot of soup or it stays as one long chourico
