It's not. Not technically at least. China is a very large country with many different languages, most of these languages are related to eachother, Chow mein comes from Canton region of China where they speak the Cantonese language, in Cantonese it's pronounced "Chow Mein". The lady in the video is speaking Mandarin Chinese, where they say "Chow Miàn" instead.
