Hi Martie. Thanks for watching, and I'm glad you liked it. It depends on the humidity in your home, the higher it is, the shorter it lasts. I make them in the morning that I need it and keep them on a very light oiled baking paper in an airtight container... Not touching each other (as they may stick together) You can make the mousse components many days in advance, keeping them in the freezer until you need them (which is great when you have alot to do) I hope this helps?
Those reindeer are so intricate and watching you pipe them was magical. Also, at 8:05, it looks like a giant Malteser that's had a bit taken out of it! :)
