Sorry for the all-caps, but I mean….CHURRO CAKE. This is serious business. Leslie and Courtney, the ladies behind the epic pop restaurant Large Marge, are Momofuku Milk alums, so they do NOT play when it comes to cake. Also, after I harrassed them for months, they've generously agreed to share their cake recipe with all of us!

This looks amazing! I made the Momofuku birthday cake a few years ago for my fiance's bday. I now really appreciate all of the steps that go into a professional cake. This looks just as labor intensive. and delicious!

About 6 years ago, i ordered a churro cake from large Marge. Idk what happened to them but idk if they went out of business because I cannot find them anymore. And ive been searching for them for a while now. I'm looking for a churro cake and I cannot find any anywhere! At least not around where I live. Looks like I'm going to have to try to make this myself 😤

I was thinking of having this cake as a wedding cake. Because we have a story with churros. The patissier said it wouldn't work unless you ate the cake right away. everything gets very hard etc. Is that true? Well, I know what happens with churros. They get hard when they're cold. But also as a cake? Do you have any other tips?

which flour do you need... plain flour or self raising???

Naj Rah Unless stated otherwise, plain, all purpose flour is the norm. Self raising has added leavening agents, and bread flour or cake flour are processed for a special purpose. xo
