The texture of your choux is a liiiittle off, it works better if its just a bit smoother and stiffer! That way, the bowls hold their shape better in my experience ~

The churro batter was too wet due to the amount of egg but im surprised it worked as well as it did

never use spatula for this. wooden spoon is more recommended for mixing doughs.
