I made some delicious low calorie, high protein ice cream in the Ninja Creami! I didn't follow any particular recipe, I just tried my own and I was VERY pleased with the result!
Without the added Cinnamon Toast Crunch pieces this entire pint is only 277 calories! And WITH them (all they add is a little extra cereal crunchiness) it's still just 364 calories. And it's got 46g of protein! I will DEFINITELY be making this regularly!

Normally a frozen desert "ice cream" base like this would use skim milk powder to help add milk solids. Ice cream needs a high milk solids to liquid ratio to produce a creamy mouth feel. These Protein ice creams are essentially replacing the skim milk powder with whey protein. While the whey protein is lower in calories and sugar, it only contains about 40% of the milk solids of skim milk powder by volume. Thus, you end up with an ice cream that has ice crystals and not a lot of body. One thing you can do to improve the texture of the ice cream while shaving off some calories is to split the difference between the protein and skim milk powder. Plus you'll stretch your wallet a bit more because skim milk powder is cheaper than protein powder. So, reduce the amount of protein powder down to about 15 grams and then add about 25 grams of skim milk powder. Then add 15 grams of cocoa powder or peanut powder to boost the flavor; 2 grams of vanilla extract is also very nice. Xantham gum is a VERY powerful thickening agent and 1/2 a teaspoon is way to much. I'd reduce it down to like an 1/8th of a teaspoon. Keep in mind that many protein powders also have xantham gum in their mix as well. Plus we are also adding a egg yolk to the recipe which even further thickens and emulsifies the base. So, we may not even need to add the extra xantham gun to this. In other words, the recipe is just getting blown out by too much emulsifiers which causes a mucus like texture. Since we are adding an egg to this recipe we REALLY should be warming this up on the stove a bit to about 170 F to pasteurize the eggs bacteria and also boost the flavor of the ice cream a great deal. Or, just make this a cold mix by dropping the egg and rely on the xantham gum as the thickener. We can further improve the texture of the ice cream if you we use a teaspoon of RxSugar Allulose Syrup which is available on Amazon. Splenda also makes a Syrup Replacement using allulose syrup which you may find at your local grocery store (my Tom Thumb carries it). This will function as an invert sugar in the recipe which is often added to ice cream to make it much smoother and improve the body of the ice cream a great deal. And it will also pump the overall sweetness of the ice cream up a fair bit. Finally, I'd say the ice cream base needs bit more fat as well to really come together. If you replace about a quarter of the skim milk with some heavy cream you'll bring the fat percentage up a bit to about gelato levels and it will become a much smoother and more filling treat. But I understand this is supposed to be low calorie so adding more fat is up to you. Me personally, I make about 600 grams of my ice cream base and then split it between two Creami cups so I get about 300 grams a cup. This is equal to about three scoops of ice cream which is perfect for an after dinner desert and in general puts me in about the 400 calorie range.

My wife loves getting moolates and I personally love ice cream but since she can't do much dairy this is our occasional treat before a walk. This looks like a solid recipe and I'm thinking I could try something like this with various flavors. I have tested and I can confirm a bullet blender works but you got to do small batches. Too much and it just kinda sticks.

Good to hear you found a way to make some in the blender! And I know this can be done with non-dairy milks. I bet with the right blend of cinnamon, vanilla and sweetener, a fully non-dairy version should be possible. 😁

@@TheCogIsShred I have been using oat milk for her. Mixed fruit and whatever she wants me to put in. Too much frozen stuff will cause the blender to lock up so I have to do it in small batches and freezing. It's annoying but makes her happy so I deal with it.

@oscarosborn121 I'm not sure, but it would probably still taste good. I've used oatmilk once and it worked well, and many recipes I've seen use almond milk, so it's worth experimenting! The nice thing about the Ninja Creami is that it can blend most things to an ice cream consistency!

Ohhhh, look forward to something healthier. I have made something like this to use as a coffee flavoring. Here is what I have done: Glucerna Skim milk Ice creme protein powder dash of yogurt extra cinnamon small amount of cinnamon cereal. Blend well. Divide into portions. Freeze. Just add one or two portions before adding hot water and coffee. Unfortunately, mine is calorie-dense, but when it is difficult to eat that day it provides some nutrition with the coffee.

That's a good recipe. My wife would like that. She's not worried about calories, I don't think she could gain weight if she tried. I personally need to keep track.

@@JamesSarin Thanks. It is a starting point to add more or less. I first wanted to use up scraps and add different flavors/textures/nutrients. Some days I have trouble eating, so I drink. Works for me, may not for others.

So far I think so. I've been using it almost daily since I got it! My wife and I love being able to make so many different kinds of ice cream and keep the calories low. I love it!

Thanks for checking... it's possible I didn't calculate the extra half cup of milk. I'm still getting the hang of making these videos and measurements, and I thought I had it right, but I must have missed something when calculating. What I'm getting now is 396 calories with the cinnamon toast crunch pieces, and 309 without. It's still fairly low calorie, but not quite as low as I had hoped. I'll definitely keep this in mind so I can be more thorough in future videos, thanks!
