Ingredients : 5-6 Medium sized Potatoes
1 Onion
2 Bell Peppers
2 Cartos
1 Parsnip
Apio Celery ( 50g )
Smoked Pork Ribs
2 Egg Yolks
1tbsp Vegetable Seasoning
3tbsp White Vinegar
1tsp Dried Thyme
1tbsp Dried Tarragon
3-4 Bay Leaves
Fresh Parsley
Fresh Dill
200g Chopped Tomatoes
300g Sour Cream
Salt , Black Pepper

Start by chopping up the pork ribs into pieces , and cut vegetables in cubes ( pre wash and peeled ) . Cut the potatoes in big cubes and pour about 5 litres of water in a pot . Add the ribs and boil for 35-40 minutes on medium heat .After the time is up , add dry tarragon, dry thyme, bay leaves, vegetable seasoning, chopped onion, bell peppers , carrot ,celery , parsnip and chopped tomatoes , and put the lid on , leaving the vegetables to boil for 15 minutes and then you can add in the potatoes .
Let it cool for another 25 minutes so the potatoes boil properly too, and make the sour cream dressing. Add 2 egg yolks in a bowl, sour cream and take a couple of ladles of soup and add them in , making sure to mix really well ( the sour cream needs to be taken up to the same temperature as the soup so it doesn't curdle up ) . Then pour everything back into the pot , add vinegar, salt and pepper as you wish, turn the heat off and add fresh chopped up parsley and dill. You can serve it with red onion and chilli peppers . Enjoy !
